Our Shou Xian is hand produced by tea masters from the Weng family using skills passed down through the generations. This superb spring harvested oolong is produced from the protected area of Wuyi Mountain National Park in Fujian Province, China. Teas from this area are known as rock teas, or yan cha, due to their unique petrichor or stone taste. Tea bushes cling to the rocks within this beautiful landscape of gorges and rivers. After rainfall the rocks retain lots of water and the tea bushes thirstly draw this up producing the amazing petrichor flavour. Shou Xian varietal (also known as Water Sprite or Narcissus),  is also found  in Guangdong Province where it is believed each of the varietals of the Dan Cong oolongs are descendants from the original Shou Xian from Wuyi Shan. Shou Xian is plucked late April taking 3 or 4 leaves on the stalk. The tea is partially oxidised between 40% and 50% and finally, after the stalks have been removed, roasted over charcoal.

Shou Xian offers a lighter more caramel and floral Wuyi Shan oolong than Rou Gui.

The gently twisted very long dark brown leaves intermingled with paler caramel coloured ones omit a honeyed and gentle floral notes. The liquor is a sparkling bright amber with aromas of sweet honey, gentle wood bark and flowers. The taste is smooth, light and caramel with delicate floral notes and a sweet fruitiness. The lingering finish is one of delicious stone minerality so typical of rock oolongs.

Shou Xian would be delicious with chicken or try with light cakes such as Victoria sponge
