Peacock's Paradise not only tastes delicious but it looks great too! The wonderful blend of vitamin C loaded rose hips along with fruity apple and pineapple pieces,refreshing lemon grass, all mixed together with fennel seeds, eucalyptus and lemon balm leaves and finished with little candied birds and the blue butterfly pea flowers make for a delicious drink which brews a rich blue colour. Blue butterfly pea flowers, which have been used to make an infusion for centuries in S.East Asia, are known for their amazing health benefits including anti-oxidant and anti-stress properties and are purported to be beneficial for good eye and skin health along with many other health benefits. 

This infusion is great fun visually. Once steeped Peacock's Paradise will change colour based on the pH level of the substance added. So add lemon to change the infusion to a rich royal purple colour or add hibiscus for a deep red colour. Enjoy and experiment!

The infusion is a colourful mix of deep pink rose hips and blue butterfly pea flowers interspersed with chunks of apple, blades of refreshing lemon grass, little pink cornflower blossoms and tiny candied bird shapes. The blend is furthered enhanced with fennel seeds, eucalyptus leaves and fruity pineapple chunks. On infusion the blend brews a beautiful blue colour with a smooth delicious aroma. The flavour is mellow with notes of the blue butterfly pea flowers coming through, a little fruitiness and finishing on a gentle sweet note. Pop a slice of lemon in to see the colour change to purple.

This infusion deserves to be drunk on its own to enjoy the experience of watching the colour change - if you decide to do that! Alternatively it would be great with fruity desserts or sweet cakes.

3g to 200ml water at 100c for a minimum of 5 minutes, preferably 10 minutes.
