Rooibos (red bush), is grown on the slopes of the beautiful Cape of Good Hope coastal mountains in South Africa. Rooibos has been enjoyed for centuries as a drink in South Africa- first by the Khoisan people and then by the Dutch settlers who used it as a substitute for tea which was both costly and had to be imported. Rooibos( Afrikaans for "red bush"), is now the national drink of South Africa where it is served much like a black tea (camellia sinensis), with milk and sugar or lemon slices. 


Rooibos is made from the bushy shrub aspalathus linearis, and is caffeine free which makes it an ideal night time drink. It has the added health benefit of being full of anti-oxidants. It can be infused for a long time without becoming bitter and lends itself to blending with other ingredients, including flavourings that are traditionally used with tea leaves offering a caffeine free version of old favorites such as Earl Grey. Rooibos is especially compatible with citrus fruit flavours and so blending a rooibos version of Earl Grey rooibos is the perfect combination!

Try popping in fresh lemon slices to really bring out the lemon flavour or add orange slices to create your own Lady Grey experience. 

The deep chestnut red, needle like pieces of rooibos are intermingled with chunks of lemon peel. The smell is fresh and sharp with the smell of bergamot and lemon, overlaid with the distinct rich smell of rooibos. On steeping the infusion takes on a deep red colour with a beautifully balanced flavour of the sweetish, gentle woody spiceness of the rooibos and the fresh sharp taste of bergamot and lemon. Earl Grey rooibos can be drunk with the addition of milk, or lemon may be added to really enhance the lemon flavours.

Earl Grey rooibos is delicious drunk on its own but also try it with chicken or turkey dishes or as part of an afternoon tea with lemon cake or fruit cake.

3g/ 1tsp of rooibos to 200 ml of water at 100c for a minimum of 5 minutes, but preferably 10 minutes.
