Tie Guan Yin, also known as Goddess of Mercy", undergoes a special process whereby the leaves are repeatedly placed in round canvas bags, rolled, removed, heated briefly and returned to the bag before a final drying. The process adds a wonderful depth of flavour to the tea and the result is a distinctive " bead with tail" shape which unfurls slowly on infusion. As with many Chinese teas, this oolong has a delightful creation story. A poor farmer was distressed to see a decaying temple to the Goddess Guanyin each day on his way to the tea fields, and decided to repair it. As a reward the goddess came to him in a dream and told him of a treasure he would find in the fields behind the temple. The treasure was a Tie Guan Yin tea shoot!
The typical "bead and tail" shaped leaf ranges from a deep sage to a fresh lime colour, with an inviting floral and buttery aroma. On infusion, the leaf unfurls sensuously to reveal a champagne coloured cup, with the same delicate floral, buttery sweet aroma as the dry leaf. This tea has an indulgent flavour, reminiscent of orchids and gardenias, and a smooth taste.
